Creamy Cucumber and Dill Salad

Cool as a cucumber sometimes describes a calm and composed disposition. It means something very different on a hot July day! Cucumbers are made almost entirely of water – 95%. They help keep the body well-hydrated and are packed with vitamins, minerals, phytonutrients and dietary fiber.  The addition of red onions, olive oil, fresh dill and garlic adds to the nutrient density of the cucumbers. So as you fire up the grill you can also cool down with this refreshing salad.

Creamy Cucumber and Dill Salad

Makes about 8 servings

Ingredients:

3/4 cup sour cream or plain whole milk Greek yogurt

Juice of 1 lemon

2 teaspoons extra virgin olive oil

1/4 cup minced fresh dill

1 large or 3 small garlic cloves, pressed or minced

1 teaspoon granulated sugar

1/2 teaspoon Kosher salt

Pinch of black pepper

2 English cucumbers peeled or 7 to 10 small, unpeeled cucumbers thinly sliced (4 cups)

1 cup thinly sliced red onions

Instructions:

  1. In a medium mixing bowl stir together sour cream or yogurt, lemon juice, olive oil, fresh dill, garlic, sugar, Kosher salt and black pepper. Refrigerate until an hour before serving.
  2. Prepare cucumbers and onions. Combine with dressing and toss to coat.
  3. Chill one more hour and serve.
