Watermelon Salad

If your fall football games still feel like summer, there is no better way to beat the heat for those first few games than with watermelon! Out of hand or in a great salad, early tailgating needs a delicious cooler! Add cucumbers, mint, and feta to a watermelon salad and you have a nutrient dense delight!

Watermelon Salad
Makes 8 servings

Ingredients:

For the dressing:
2 tablespoons raw local honey
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
Pinch of kosher salt

For the salad:
10 cups cubed watermelon
1 English or hothouse cucumber, cubed (about 2 heaping cups)
1/2 cup fresh mint leaves, torn
1/2 cup crumbled feta cheese

Instructions:
1. In a small bowl whisk together the honey, lime juice, olive oil and salt. Set aside.
2. In a large bowl combine the watermelon, cucumber and mint.
3. Add the dressing and gently toss to combine.
4. Carefully pour into a serving bowl or platter with sides. Top with feta cheese and serve.
