Out of hand or in a great salad, early tailgating needs a delicious cooler! Add cucumbers, mint, and feta to a watermelon salad and you have a nutrient dense delight!

Watermelon Salad
Makes 8 servings
Ingredients:
For the dressing:
2 tablespoons raw local honey
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
Pinch of kosher salt
For the salad:
10 cups cubed watermelon
1 English or hothouse cucumber, cubed (about 2 heaping cups)
1/2 cup fresh mint leaves, torn
1/2 cup crumbled feta cheese
Instructions:
1. In a small bowl whisk together the honey, lime juice, olive oil and salt. Set aside.
2. In a large bowl combine the watermelon, cucumber and mint.
3. Add the dressing and gently toss to combine.
4. Carefully pour into a serving bowl or platter with sides. Top with feta cheese and serve.
