Scallions seem to have brunch written all over them. They are perfect for savory baked goods like these scones, as well as waffles, pancakes, crepes, French toast and more! They are also stars in all kinds of egg dishes, potato dishes and breakfast casseroles. These scones will be a winner at any springtime brunch, lunch or dinner!

Ham, Cheese and Scallion Scones
Makes 10 servings
Ingredients:
3 1/4 cups all-purpose flour
2 tablespoons granulated sugar
1 1/2 tablespoons baking powder
1 teaspoon garlic powder
1 teaspoon ground black pepper
3/4 teaspoon kosher salt
1/2 teaspoon paprika
1/4 cup salted butter, frozen, cubed
8 ounces sharp cheddar cheese, shredded
8 ounces cooked ham, cut into small cubes
1 cup thinly sliced scallion
2/3 cup + 2 tablespoons half-and-half, divided
1 large egg
Coarse salt for sprinkling (optional)
Instructions:
1. Line a half sheet pan with parchment paper.
2. In a food processor, combine flour, sugar, baking powder, garlic powder, black pepper, salt and paprika. Pulse to combine ingredients.
3. Whisk 2/3 cup of half-and-half with the egg. Add to the dry mix and pulse to combine.
4. Add small frozen butter pieces and pulse until dough starts to stick together.
5. Add in the cheese, ham and scallions. Pulse a few times to disperse the ingredients.
6. Pour the shaggy dough onto the prepared baking sheet and gently press to form a 4-by-14-inch rectangle (it should be about 1 1/2 inches thick). Refrigerate for 30 minutes.
7. While the dough is chilling, preheat the oven to 400 F.
8. Cut dough into 5 equal sections. Then cut each section into 2 triangles. Space the triangles out across the baking sheet. Brush the tops with the remaining half-and-half and sprinkle lightly with
coarse salt, if using.
9. Bake for 24–26 minutes until golden brown. Transfer to a rack to cool slightly and serve warm.
