Honey Broiled Grapefruit with Vanilla and Spices
Makes 4 servings
Ingredients:
2 large pink grapefruits
2 Tablespoons raw local honey
1 teaspoon pure vanilla extract
A pinch of ground cardamom, cinnamon or ginger for each half
Instructions:
- Pre-heat the broiler. Make the bases of your grapefruit halves flat so they don’t tip over by slicing off about a 1/4 inch of the peel on the base and stem end. Then slice each grapefruit in half.
- With a small, serrated knife, loosen the grapefruit sections from the membrane. Place the grapefruit halves on a broiler safe rimmed metal pan like a half or quarter sheet pan.
- In a small bowl, stir together the honey and vanilla extract. Drizzle the honey mixture over the grapefruit halves.
- Dust each with a pinch of your preferred spice.
- Broil until bubbling and lightly browned in spots, about 4 to 6 minutes. Don’t walk away — keep a watch on them while broiling to avoid burning.
- Remove from the oven and let cool slightly.
- Serve warm or at room temperature. Some may like to top each with their favorite granola to give it a real crunch.
