Cardamom is a spice that is not very familiar in the west, but has been used in Nordic, Middle Eastern, and
South Asian cuisine for centuries. In the cold Nordic countries, cardamom and sour cream make these crisp and tender waffles different than our own. As the temperatures drop, there is nothing like the smell of waffles to get you out of your warm bed! Cardamom gives them their distinct taste, and with the addition of whole wheat, cinnamon, and vanilla, this recipe piles on the phytonutrient benefits. Top with honey, whipped or sour cream, Greek yogurt, fresh fruit, and/or jam – and you have delicious nutrient density on a plate.

Cardamom Sour Cream Waffles
Makes 7 servings
Ingredients:
3/4 cups all-purpose flour*
3/4 cups whole wheat flour*
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 large eggs
1 cup whole milk
3/4 cup sour cream
1/2 cup packed brown sugar
1 teaspoon butter, melted
1 teaspoon vanilla extract
Instructions:
- In a large bowl, combine the first seven dry ingredients. In a separate bowl, whisk together the eggs, milk, sour cream, brown sugar, butter, and vanilla. Stir until ingredients are just combined.
- Bake in a preheated waffle iron until golden brown.
- Top with honey, whipped or sour cream, Greek yogurt, fresh fruit, and/or jam.
*You may substitute your favorite gluten-free flour.
